Makin' It In Michigan

Tonight I made a super easy, cheap & yummy side dish that my kids loved and no they don't usually like healthy food!

You've probably all made these before but, I never realized how frugal this dish was until tonight. I purchased one sweet potato and made an entire tray of sweet potato fries, enough for four people!

They were so good that by the time I thought about taking a photo, they were gone!

• Preheat oven to 450ºF.
• Peel sweet potatoes & cut into 1/2-inch thick sticks
• Place potatoes into a large bowl and drizzle with olive oil & sprinkle with salt & pepper
• Place potatoes in a single layer on baking sheet.
• Bake approximately 10 minutes then turn potatoes over and return to oven.
• Bake potatoes an additional 20 minutes or until done.Season to taste and serve hot.

Whenever a recipe calls for any type of fresh herb, I'm always torn between being a good cook and being a frugal shopper until a friend told me about a great way to store the unused portions.

You can freeze the herbs by making a paste mixing 1/3 cup of oil with 2 cups of herbs in a blender until smooth. Store in sealed jars or in ice cube trays that are thoroughly wrapped to make them airtight.The paste will also keep for about a week in the refrigerator.

Good candidates for grinding into pastes include:

Today while I was folding clothes I watched Ten Dollar DInners on The Food Network and there was a really fantastic looking recipe for Pineapple & Avocado Salsa that looks super easy to make. Then they broiled marinated tilapia and served the salsa on it!

 I'm going to try it this Friday so I'll let you know if it turns out as good as it looks!

No seriously, I kind of approach it like an equation by putting in the "known variables" and then solving for the "unknown variables"

When I approach my weekly meal planning this way, it's a whole lot less intimidating. Now I know I only need to "plan" three additional dinners and put together a grocery list.

My next step will be to look at what proteins we have for these three days
